Hi friends!

The past few days, wow, they have been emotional but on a positive note I’ve been baking & cooking quite a bit. It’s one way I handle grief and stress. I think it makes me feel better because it’s a form of productivity and I like feeding my husband and babes. Here is our dinner from Monday, One-pan baked chicken fajitas – soooo good!

This is a part of our weekly dinner budget, which speaking of I need to post our dinner themes for this week. Expect that up later tonight (:

One-Pan Baked Chicken Fajitas

Ingredients:

  • 1 1/2 Ibs boneless chicken breasts, sliced into strips
  • 1 green, orange, red, and yellow pepper sliced into strips
  • 1 red onion sliced
  • 2 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp cayenne
  • Olive Oil

Instructions:

  • Preheat your oven to 400F
  • Coat the sliced veggies and onion in oil.
  • Place on parchment lined baking sheet and bake in the oven for 8 minutes.
  • In a large bowl, mix chicken and spices until fully coated.
  • Add the chicken to sheet pan, on top of the veggies!
  • Bake for 15 minutes
