Hi friends!

I’ve received an overwhelming amount of messages thanking me for opening up and talking about our debt-free journey! I’m so glad it resonates with many of you because it was outside my comfort zone to start talking about. I decided one day it would be a positive topic to shed light on this page because its something I could have used when we started on this journey two years ago.

We started to get serious about becoming debt-free when we welcomed our twins earth side! Honestly, we just want to give them and our family a good life and a big part of that is having financial freedom. It’s not about being the wealthiest humans on the planet but rather be responsible and to know where the heck our money is even going! I look back on how we use to spend money and holy cow we just guessed as we went. Once we started tracking our monthly expenses in the Every Dollar App I knew one specific area I could significantly improve in was groceries. I use to go to the store and blindly buy items, things that looked good at the moment. I never went in with a plan or ideas for dinners every single day of the week, For the past 7 months, I have been planning our dinners for the week out every Saturday and then ordering our groceries online using Kroger pickup. I decided to start ordering groceries because it helped with my impulsive picking out/spending. You can read more about that and Kroger pickup right here!

I simply sit down with my notepad and pen and plan dinners for the week. Once it’s written out I start picking out what I will need on Kroger pickup. I pick meals that are healthy (ish) but also budget-friendly. I go carb-heavy on some of the dinners because it’s cheaper and I have more mouths to feed than just my own! However, I try to keep it balanced and throw in vegetables and complex carbs whenever I can!

I will start documenting more of my recipes on here but a lot of you have been asking for me to just simply show my plans for the week right here on the blog. So that I will do! For now, I’m giving you my plan for the week but no worries I’ll start adding recipe links shortly to each day directing you to the specific recipe. I just have to get going on getting them up here on the blog – be patient with me (:

Monday:

Stuffed bell peppers

Tuesday:

Taco Tuesday! I use ground turkey and I usually have a big taco salad. I get shells for my husband and twins to mow down on! Occasionally I’ll opt out of the salad and eat some tacos with the family. However, as I’m nearing 36 weeks pregnant I’m trying hard to intake as many vegetables as I possibly can. It makes me feel better & have more energy (:

Wednesday:

Spaghetti (using brown pasta) paired with brussell sprouts as the side. We do not typically pair this dinner with garlic bread just because spaghetti within itself is filling! Highly recommend on pairing it with an easy vegetable side dish so it’s balanced for you and your fam bam. But if you want the bread, get the dang bread! You do you (:

Thursday:

Cracked Slaw!

I make this almost every single week because it’s healthy, delicious, and oh so easy to whip together!

Friday:

One-pan Baked Chicken Fajitas

I will buy some tortillas to go along with this in case Matthew wants to make a wrap with it. I personally like it without the tortilla. These fajitas taste great paired with some sour cream (:

Saturday:

Cauliflower pizza from Costco

No joke, I want to puke when I see the prices of cauliflower pizza at Kroger! $8-$10 for a smaller sized pizza? No thank you! You can buy Miltons Cauliflower pizza and it comes in a 2 pack (bigger sized pizzas) for $14 at Costco. Yes, it’s $7 a pizza but they are the perfect size compared to the ones at Kroger or Walmart. I hate to bash on these stores considering I shop there for other items but it’s the truth. If you are going to purchase cauliflower pizza get it from Costco. If you don’t have a membership – borrow a friends and try it out. #noshame

Sunday:

Dinner at Nana & Jidu’s! This would be my parent’s house. For those that do not know “Jidu”  means grandpa in Arabic. Not a super common name you probably hear all the time so thought I would clarify! My sister, brothers, and in-laws all gather at my parents for dinner and it’s super fun to get together and see everyone! It’s also budget friendly because we all contribute to dinner. I typically provide the vegetables and make some sort of sheet pan. This week I will be making roasted brussell sprouts and sweet potatos on a sheet pan – yum!

There you have it! This weeks dinner schedule (: I spent $120 total on groceries for the week including what I needed to make these dinners. I’ll continue to document our weekly dinners and if you want me to include what I purchase for breakfast, lunch, and snacks then please comment below! I don’t want to overload you with a bunch of grocery items unless it’s wanted!
