Hi friends! Here I am popping in on a Wednesday, what is life?! The babies are napping so I wanted to quickly share a recipe with all of you that I am LOVING. Lately, this has become a staple treat in our home. It takes ten minutes tops to mix together and throw in the oven. You guys know me by now, I’m all for simplicity! I originally started making this sweet treat because I hated throwing the bananas out if they were starting to go bad (such a waste). Now, I make a point of purchasing extra bananas so I can make a few loaves (my husband eats…a lot!). We may or may not give Oliver and Olivia a little bite as well!
*Recipe makes one loaf-I use a 9×5 inch loaf pan!
Ingredients:
- 1/3 cup extra-virgin olive oil
- 1/2 cup of honey or maple syrup – I’ve tried it both ways and it tastes great either way!
- 2 eggs
- 1 cup mashed ripe bananas (technically about two large bananas)
- 1/4 cup milk of choice or water- Again, I’ve tried it both ways and I prefer using skim milk over water!
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1 3/4 cups of whole wheat flour
- This is optional but something I’ve been meaning to try: 1/2 cup mix-ins such as walnuts, pecans, chocolate chips, or raisins- Yum!
Instructions:
1.) Preheat oven to 325 degrees Fahrenheit and grease a 9×5-inch loaf pan
2.) Using a whisk, beat the oil and honey together in a large bowl. Add the eggs and then whisk in the mashed bananas and milk!
3.) Add the vanilla, baking soda, vanilla, salt, and cinnamon- whisk to blend. Switch to a big spoon and stir in the flour. If you are going to add in any additional mix-ins, now is the time to do so!
4.) Pour the batter into your loaf pan and sprinkle lightly with some cinnamon.
5.) Bake for 55 to 60 minutes!
Let the bread cool in the loaf pan for 10-15 minutes
