Here I am stopping by on a Wednesday! What is life? Hiiii, my favorite internet friends!

I found out really fast that my babies really, REALLY love muffins! My mom and I took them to Panera for the first time and Olivia, especially, was chowing down! It was the cutest site to watch. Originally I was just looking for something to entertain them in their high chairs while I scarfed my food down real fast. They shared one muffin (let’s be real a lot ended up on the floor) and it entertained them for almost 20 minutes! I was at Kroger later in the week and scooped up a mini muffin pan so I could make my babes a healthier version of the muffin they scarfed down! Let’s take a look.

Mini Banana Muffins

Ingredients:

  • 3-4 banana’s (I used three large ones!)
  • 1/3 cup melted butter
  • 1 egg
  • 3/4 cup unsweetened applesauce (originally the recipe said 3/4 cup sugar but applesauce is a healthier alternative!)
  • 1 teaspoon vanilla
  • 1 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1 1/2 cups of flour (I used wheat!)

Directions:

  • Preheat oven to 350 degrees! Spray mini muffin pan
  • Peel bananas and mash them
  • Stir in melted butter, egg, applesauce, vanilla, baking soda, and salt. Stir!
  • Add in the flour and stir well
  • Pour into the mini muffin pans. By the way, this recipe makes 24!
  • Bake for 10-15 minutes until they start to brown!

I would be a big fat liar if I said Matthew and I do not munch on these as well. So simple yet so tasty! What I love most about making mini muffins versus regular sized is that it takes way less time! It’s easier to randomly whip them up without much thought!
