Most likely you are finding this recipe after seeing my recent post on Instagram and Facebook! I found myself making this around 9:00 p.m. Babies were asleep and my husband was doing a few last minute work stuff! Sometimes, you just want to watch some dang tv and say screw it to the cleaning and cooking! But if something is important to you, you will make it a priority. It’s important to me that our fridge is full of healthy options during the week when I’m busy keeping up with my littles . That way I don’t have to stress about what to eat plus its nice to have food prepped for dinner the following day. It makes me feel like I am ahead of the game and starts my day off instantly on a positive note. I hope you enjoy this yummy dish as much as my family does! Enjoy!
Ingredients:
Sauce:
- 3 TBS soy sauce
- 3 TBS low-sodium chicken broth
- 1 1/2 tsp cornstarch
- 1 TBS sesame oil
- 2 tsp sriracha
- 2 TBS olive oil, divided
Skillet mix:
- 1 IB lean ground turkey
- 1 small yellowonion, halved then thinly slices into strips
- 1 red pepper, sliced into thin 2-inch strips
- 1 TBS peeled and minced fresh ginger
- 4 cloves garlic minced
- 6 cups shredded cabbage (16 oz)
- 1/4 cup chopped green onions
Instructions:
- In a small mixing bowl whisk together the 1 TBS soy sauce with corn starch. Mix in the remaining 2 TBS soy sauce, chicken broth, sesame oil, brown sugar and sriracha.
- Heat 1 TBS of olive oil in a 12-inch non-stick skillet over medium-high heat.
- Add half the ginger and half the garlic, saute for 20 seconds. Add turkey and season with a little salt. Cook while breaking up the turkey until it has been cooked all the way through. Drain and transfer turkey to a sheet a foil, wrap to keep warm!
- Heat remaining 1 TBS oil in the same skillet and add onions. Saute them for around 4 minutes until they soften. Next, add in the bell pepper and remaining of the ginger and garlic. Saute for 1 more minute. Toss in the cabbage and carrots then whisk soy sauce mixture and pour over cabbage. Allow everything to cook and toss frequently until the cabbage is tender (around 4-5 minutes). Toss in cooked turkey! Serve warm and know you can always top your bowl with more green onions and sriracha!
*** I did not chop the cabbage myself I bought it premade already as well as the matchstick carrots! Huge time saver!!
