Alright friends, this dish is to die for! Orginally, It was part of our meal plan for this week! If you checked out my last blog post on Cutting Costs On Groceries you may remember me mentioning this dish. I had it set to make this Friday without realizing we would be at a rehearsal dinner so instead we had it Sunday night. Friends this has by far been my favorite meal and I’m for sure making it again next week. Easy, delicious, low carb…What’s not to like?

Ingredients:

  • 4-6 ounces salmon filets
  • 2 cups of broccoli florets
  • 1 cup snow peas (I forgot to get these so didn’t use them!)
  • 1 cup bell pepper chopped
  • 1 cup carrots slices into thin strips ( I cut mine into circles because I’m a rebel!)
  • Sesame seeds to garnish
  • Teriyaki Sauce:
  • 1/2 cup light soy sauce or you can always do 1/4 cup soy sauce and 1/4 cup water
  • 1/4 cup brown sugar
  • 2 garlic cloves minced
  • 1 tsp sesame oil (optional but I think it made the sauce!)
  • 1 tsp cornstarch

Directions:

1.) Pre-heat the over to 400F. Make sure to line a baking sheet with foil or grease with oil. Then set aside.

2.) Whisk all the ingredients for the sauce in a medium sized bowl. Then place the salmon in a large ziplock bag or bowl. Pour the sauce over the salmon and marinate in the fridge. You can marinate it for 15 minutes or up to 24 hours – that’s your call!

3.) Once the salmon is done marinating transfer the salmon to the baking sheet. Keep any marinade left in the bag. Add the broccolo, snow peas, bell pepper, and carrot to the pan. Spoon a few teaspoons of the marinade over the veggies and then drizzle with a teaspoon of oil.

4.) Bake at 400 for 14-16 minutes or until the salmon is flaky and cooked all the way through! Baking time will also depend on how thick your salmon is.

5.) While your salmon is baking, transfer the rest of the marinade to a small sauce pan and bring to a boil. Reduce the heat to a simmer and cook stirring until thickended.

6.) Remove the salmon and vegetables from the oven and brush the marinade onto salmon fillets. If you want, top with a sprinkle of sesame seeds.
