Brussels Sprouts have become a staple vegetable in the house for a few years now! It’s just such an easy and healthy side to make! Prior to realizing how delicious brussels sprouts were baked, I neverrr ate them. This dish really is a win-win for me so I thought I would share with all of you while the babes take their long nap! You ready? It’s so dang simple.

Roasted Garlic Brussels Sprouts

Ingredients:

  • 2 pounds of Brussels sprouts. Make sure to cut each one in half.
  • 1/2 cup Olive oil!
  • 1/2 tbsp garlic powder

Instructions:

  1.  Preheat your oven to 400 degrees Fahrenheit.
  2. In a large bowl, toss the brussels sprouts with olive oil and garlic powder.
  3. Place the brussels sprouts into a large baking pan and shake the pan to get the brussels sprouts to be in an even layer
  4. Bake for 40 minutes, turning the brussels sprouts with a spatula halfway through at 20 minutes!

I became a lot more interested in learning a few “go to” vegetable recipes when I made a rule to always eat (at least) one serving of vegetables a day. When I found I was pregnant, I became even more adamant about upping my greens! It seemed fairly easy to always incorporate fruits into my daily regimen but the struggle was with my vegetable intake!
