I call this the lazy wife dinner when I do not feel like making a darn thing! We need to have a few meals like this, right? I enjoy making dinner because it puts a big smile on Matthews face (and you know, eating is cool too) but some days I struggle to find the time. My littles keep me busy so not gonna lie in order to make these I put them both in their high chairs and they watched Frozen while eating some banana. That bought me ten minutes to make 4 sandwiches and call it a day! Woo-hoo!
Ingredients: (makes 1 sandwich)
- 4 slices of turkey bacon
- 2 pieces of lettuce
- 2 TBS of butter
- 2 slices of whole wheat bread
- 2 slices of american cheese singles
Instructions:
- Cook your bacon! I prefer using the stovetop over the oven.
- Soften butter in the mircowave for about 10 seconds
- Brush butter on 2 sides of the bread
- Add 2 slices of cheese
- Add filling ingredients – bacon, lettuce and tomato
- (optional) If you want your sandwich extra cheesy top this with two more slices of cheese. I did not add this for mine but I did for Matthews!
- Top with bread with the buttered side up.
- Heat up your skillet and plcase the sandwich buttered side down.
- Next butter top piece of bread.
- You can always place sauceman on top of the sandwich to add a little weight. This just helps the sandwich ingredients combine and the cheese to melt!
- Cook until brown, flip and again cook until brown.
