Sheet Pan Steak and Veggies!

Friends, you have been asking me to just share nightly what I have made for the day (dinner wise) so I'm going to try my best to hop on here at night to share that day's dinner! It's a new week budgeting and prepping meals! I stayed at my goal of $130 for the week so let's see if I can stick to that or have last minute trips to make later in the week. We shall seeee! For tonights (Monday's) dinner I prepped a sheet pan consisting of vegetables and steak. You know how us women get called "basic" when we hit up the drivethru to Starbucks? I literally think the same thing about men when they see a steak - ha! Seriously though, I do. I find it super funny how excited steak makes men, at least all the ones I've ever met! When I came across this recipe, I knew I had to make it because Matthews #1 love is STEAK. I'm fine eating it occasionally but I'm also fine not...ya feel me? Maybe I'm just a weirdo but hey thats cool! Also, I would just like to add that this (so far) as been the easiest dinner recipe I've prepped during naptime, so it will be made again very soon. I'm talking like 15 minutes to throw together. That's what I'm talking about! Budget wise this is the most expensive off my list for the week but it was justified because we have a wedding rehearsal dinner Friday and the wedding Saturday...which means no cooking for me! It also fit into our weekly budget so I went for it. Sheet Pan Steak and Veggies Ingredients: 2 pounds of baby red potatoes 16 ounces of broccoli florets 2 TBS olive oil 3 cloves of garlic, minced 1 tsp dried thyme Kosher salt and freshly ground black pepper 2 pounds (1-inch-thick) top sirloin steak, patted dry Directions: Preheat your oven to broil. Lightly oil the baking sheet you will be using or coat with some spray! In a large pot of boiling salted water, start cooking your potatoes for 12-15 minutes. Make sure to drain them well! Place the potatoes and broccoli in a single layer onto the baking sheet. Add the olive oil, garlic and thyme. Season everything with salt and pepper. Toss to combine.
