Hi friends! The past few days, wow, they have been emotional but on a positive note I've been baking & cooking quite a bit. It's one way I handle grief and stress. I think it makes me feel better because it's a form of productivity and I like feeding my husband and babes. Here is our dinner from Monday, One-pan baked chicken fajitas - soooo good! This is a part of our weekly dinner budget, which speaking of I need to post our dinner themes for this week. Expect that up later tonight (: One-Pan Baked Chicken Fajitas Ingredients: 1 1/2 Ibs boneless chicken breasts, sliced into strips 1 green, orange, red, and yellow pepper sliced into strips 1 red onion sliced 2 tsp chili powder 1 tsp salt 1/2 tsp onion powder 1/2 tsp garlic powder 1 tsp paprika 1/2 tsp cumin 1/4 tsp cayenne Olive Oil Instructions: Preheat your oven to 400F Coat the sliced veggies and onion in oil. Place on parchment lined baking sheet and bake in the oven for 8 minutes. In a large bowl, mix chicken and spices until fully coated. Add the chicken to sheet pan, on top of the veggies! Bake for 15 minutes Mix everything together and eat up! Comment below and let me know if you end up trying this recipe out.
