Hi friends! Here I am popping in on a Wednesday, what is life?! The babies are napping so I wanted to quickly share a recipe with all of you that I am LOVING. Lately, this has become a staple treat in our home. It takes ten minutes tops to mix together and throw in the oven. You guys know me by now, I'm all for simplicity! I originally started making this sweet treat because I hated throwing the bananas out if they were starting to go bad (such a waste). Before I get started I would just like to say that, no! I am not following the keto diet...I'm just adding bulletproof coffee to my daily regimen! Now lets dive in...what the heck even is bulletproof coffee?! When you go to research this, every site is going to have a slightly different recipe but they all have one main ingredient... Grass-fed unsalted BUTTER. Like what? Past that the ingredients will vary. Some people will say they use coconut oil, others MCT oil or brain octane oil. Brrrrrr! It's snowing like crazy here in Madison, Wisconsin! Everytime I go to leave, Stella stands guard at the door. It's hilarious because she thinks she's so tough! Ha! Chex mix brings me back to grade school days! My friends and I would chow on it when “snack time” still existed before lunch. You would think this snack is downright awful for you. While store bought isn’t the greatest (especially due to the high amount of sodium) homemade Chex mix is quite healthy as the occasional snack! Here is why: - It provides 78% of the daily value needed for iron. This is essential in the formation of red blood cells and preventing iron-deficiency anemia! - 2% of the daily recommended calcium is found in Chex mix. - It contains 2% of the antioxidant Vitamin A and 45% of Vitamin C. This is the perfect snack to give yourself an energy boost before or after your workout! I am a peanut butter lover so this sweet treat helps me with my cravings!   Ingredients Rolled Oats - 1 cup Pitted Medjool dates - 8 Vanilla protein powder - 1/2 cup Peanut Butter - 1/2 cup Unsweetened almond milk - 1/4 cup Mini dark chocolate chips - 2 TBS Instructions First, add the dates to a food processor. Pulse until they form a thick paste. Next, add the oats and pulse only a few times until combined. Put date and oat mixture into a medium size bowl. Add protein powder and peanut butter- stir!
